Peach Yogurt Muffins


After my modifications and personalizing, we decided these taste like peach cobbler!

Modified recipe from
Allrecipes.com

Wheat germ works well; substitute 1/2 C. flour
  • 2 C. flour
  • 1/2 C. chopped pecans
  • 2/3 C. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • Dash ginger
  • 1 egg, beaten
  • 3/4 C. yogurt
  • 1/2 C. butter, melted
  • 3/4 tsp. almond extract
  • 1/2 tsp. vanilla
  • 2 T. milk
  • 1 C. chopped peaches
Preheat oven to 350 degrees F; grease muffin tins.

Combine dry ingredients. Blend egg, yogurt, butter, and extracts; add to dry ingredients and stir just until moistened. Stir in milk and peaches.

Bake for 30 minutes or until toothpick inserted in center comes out clean. Keep refrigerated; can be warmed in a oven or toaster oven at a low temperature.
