Wheat germ works well; substitute 1/4 C. flour
- 1-1/2 C. flour
- 1/2 C. sugar
- 1-1/4 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. salt
- 2 T. rolled oats
- 1 egg, slightly beaten
- 1 C. applesauce
- 1/2 C. butter, melted
- 1 tsp. vanilla
- 1 T. sugar
Preheat oven to 375 degrees F; grease muffin tins.
Combine dry and wet ingredients seperately, then mix together just until moistened. Fill prepared muffin cups two-thirds full; sprinkle with sugar.
Bake for 20 minutes or until a toothpick comes out clean.
