Cinnamon Bread

Wheat germ works well; substitute 1/2 C. flour


Freezes well
  • 2 C. flour
  • 3/4 C. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1-1/2 tsp. cinnamon
  • 1 tsp. salt
  • 1 C. buttermilk
  • 1/4 C. vegetable oil
  • 2 eggs
  • 2 tsp. vanilla
  • 2 T. sugar
  • 1 tsp. ground cinnamon
  • 2 teaspoons butter
Preheat oven to 350 degrees F; grease and lightly dust one 9x5-inch loaf pan with flour.

Combine dry ingredients and wet ingredients separately, then combine just until moistened. Pour batter into prepared pan. Combine sugar, cinnamon, and 2 teaspoons butter until mixture resembles brown sugar in texture. Sprinkle over batter, then lightly swirl into top of batter with a knife.

Bake for 50-60 minutes or until a toothpick inserted in center comes out clean. Transfer loaf from the pan to a cooling rack.
