Banana Oatmeal Muffins


Modified recipe from Hannah Huussen
  • 1-1/2 C. flour
  • 1 C. rolled oats
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 C. butter, melted
  • 3/4 C. sugar
  • 1/4 C. milk
  • 2 eggs
  • 1/2 tsp. vanilla
  • 1 C. mashed banana
Preheat oven to 400 degrees F; grease muffins tins or use paper liners.

Combine dry ingredients. Mix together melted butter and sugar; add remaining ingredients. Combine dry mixture into wet mixture, mixing just until moistened.

Divide batter evenly among muffin cups, filling them two-thirds full. Bake for 20-25 minutes or until toothpick inserted in center comes out clean.
