Peanut Butter Muffins with Jelly

Wheat germ: works well; substitute 1/2 C. flour


  • 2 C. flour
  • 1/2 C. sugar
  • 1 T. baking powder
  • 1/2 tsp. salt
  • 1/2 C. peanut butter
  • 2 T. cold butter
  • 2 eggs
  • 1 C. milk

  • 3 T. butter, melted  
  • Cinnamon-sugar
  • Jelly
Preheat oven to 375 degrees F; grease muffins tins or use paper liners.
Combine flour, sugar, baking powder and salt. Cut in peanut butter and cold butter until the mixture resembles coarse crumbs. Beat the eggs and milk; stir into the dry ingredients just until moistened. Fill prepared muffin cups two-thirds full.

Bake 15-17 minutes or until muffins test done. Top muffins with melted butter and cinnamon-sugar. Serve warm with your favorite jelly.
