Granola with Yogurt and Fruit

Recipe from HillbillyHousewife.com, modified

  • 1/2 C. butter
  • 1 C. packed brown sugar
  • 1/4 C. water
  • 3 C. rolled oats
  • 3/4 C. flaked coconut
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt

  • Yogurt
  • Fresh or dried fruit
Preheat oven to 375 degrees F; grease a large baking sheet.

Combine dry ingredients. In a large saucepan on low heat, melt together butter, brown sugar, and water. Let it simmer for a few minutes, then remove from heat. Add dry ingredients to saucepan and mix well, so all of the oatmeal mixture is coated with the brown sugar mixture. Spread granola evenly onto prepared baking sheet.

Bake for 10-12 minutes or until granola is toasted. Allow granola to cool on baking sheet, then transfer to an air-tight container. Serve granola with yogurt or milk and your choice of fresh or dried fruit (dried cranberries and canned peaches used in the photo).
