These healthy, hearty blueberry muffins are so delicious. I use dried blueberries, soaking them in hot water for about an hour before mixing them into the batter. I find the texture of these muffins is great using half quick-cooking and half old-fashioned oats.
Recipe from Taste of Home's Comfort Food Diet Cookbook
- 1 C. oats
- 1 C. flour
- 1/2 C. sugar
- 3 tsp. baking powder
- 1 egg
- 1 C. milk
- 2 T. butter, melted
- 1 tsp. vanilla
- 1 C. blueberries
- 1/2 C. oats
- 2 T. sugar
- 1 T. butter, softened
Mix dry and wet ingredients separately, then combine. Stir in blueberries. Fill greased muffin tins 2/3 full. Combine last three ingredients and sprinkle over tops of muffins. Bake at 400 degrees for 20 minutes or until a toothpick inserted in center comes out clean.
