Apple Yogurt Muffins II

Modified recipe from Allrecipes.com
  • 1-1/2 C. flour
  • 1/2 C. wheat germ
  • 1/2 C. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 C. plain yogurt
  • 1 egg
  • 1/4 C. vegetable oil
  • 2 T. applesauce
  • 1 apple, peeled and chopped
Preheat oven to 350 degrees F; grease muffin tins.

Combine dry ingredients. Separately combine the yogurt, egg, and oil; stir into dry ingredients just until moistened. Stir in applesauce and apple (batter will be thick). Fill prepared muffin cups two-thirds full.

Bake for 25-30 minutes or until muffins test done. Cool for 5 minutes before removing from pan to a wire rack.
