Applesauce-Pecan Coffee Cake

Freezes well
  • 1-1/2 C. flour
  • 3/4 C. brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 C. sour milk
  • 1/2 C. applesauce
  • 2 eggs
  • 1 T. butter, melted

  • 1/3 C. chopped pecans
  • 1/3 C. brown sugar
  • 1/4 C. flour
  • 1/2 tsp. cinnamon
  • 2 T. butter, melted
Preheat oven to 350 degrees; grease one 8" square baking dish.

Combine dry and wet ingredients separately, then mix together. Spread into prepared dish.

Combine first four ingredients for streusel and then add melted butter. Sprinkle streusel over top of batter in dish.

Bake for 45-50 minutes or until toothpick inserted in center comes out completely clean. Cut into 5 rows by 4 rows.
