Apple Streusel Muffins


Modified recipe from Allrecipes.com
  • 2 C. flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 C. apples, peeled and chopped
  • 1/2 C. butter, softened
  • 1/4 C. sugar
  • 1/2 C. brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 C. brown sugar
  • 1 T. flour
  • 1/4 tsp. cinnamon
  • 2 T. butter
Preheat oven to 375 degrees F; grease muffins tins or use paper liners.

Combine dry ingredients in a mixing bowl. Cream butter and sugars in a separate bowl. Chop peeled apples into about 1/4-inch chunks; add apples to creamed mixture, then add eggs and vanilla. Gradually add dry mixture and mix well. Spoon batter into prepared muffin tins. (Batter will be thick.)

Combine brown sugar, flour, cinnamon, and butter for streusel topping. Sprinkle a tablespoon-or-so of streusel onto each muffin. Bake 20 minutes or until muffins test done.
